Winter Vegetables - Easy, healthy and easy! (Did I say easy already?)



A warm winter dish that takes only 5 Minutes to prep. and 1 hour in the oven. It is an easy (and yummy) way to eat healthy without slaving over the stove.


1 onion
potatoes and carrots
(enough for your family)
enough olive oil to coat lightly
salt and pepper
Bake 350 for 1 hour.

To dress it up some you can also add:

Pizza topping veggies such as: bell pepper, garlic, mushrooms, sundried tomatoes. etc. (Some of your smaller veggies that do not need to soften such as olives should be added 5 minutes before pulling the pan from oven).

Your favorite spices such as rosemary, thyme, garlic or onion salt, etc.

To make it a complete "one pan" meal add chicken breasts or sausage, or any other meat that will cook fully in an hour.

You can also puree the roasted veggies and add stock for a delicious soup.

I would love a veggie bake dish! I love that it can be added with meat and make it all in 1 pot.
