Old Fashioned French Onion Soup {Recipe}

Homemade French Onion Soup is easy to make!
I discovered this recipe years ago on accident. It started as my recipe for roasts until I tasted the broth and realised it reminded me of french onion soup. A quick google check and yes indeed the ingredients I use resemble the ones needed. Now we have french onion soup with every roast. This is a recipe I made up and I hardly ever measure so I will do my best to walk you through the process, which is adjustable at the end and pretty hard to mess up. I make no promises however and will not buy you pizza for dinner if it doesn't turn out. :)

I start with a beef roast, any will do, for this post I used a london broil.


Set the roast in a pan, fill with water till the roast is halfway submerged. Generously pour soy sauce over the top of the roast until it turns the water a nice brown color. (You could also use plain salt instead of soy sauce by covering the top and salting the water around the roast.)
Season, with whatever spices you have, pepper, steak seasoning, Italian seasonings, whatever seems wonderful on a roast. Cover top of roast completely.


As the weather turns cooler I like to add garlic to everything. A whole unpeeled clove in the corners of your pan is a nice addition to the meal.

Cut two onions (have a dishtowel on hand if you are the onion-crying type, like me) and spread all over and around the roast. 

Cook at 350  around 2-3 hours. About a 1/2 hour for every pound of meat. Until cooked through.

Test the broth carefully while still hot, if salty add water. Adjust spices if desired.

And ta-da French Onion Soup. And to think I was just tossing this out before I realized what it was!



Serve with slices of the roast and a cooked garlic clove. The garlic is pealed on the plate. Or, if your roast is tender enough you can shred the roast and add it to the soup.
