Holiday Baking PREP. Weekend {From my Calendar}

Each year my family makes about
18 dozen gingerbread cookies to give friends and family at Christmas time.
We began this tradition when we needed inexpensive gifts one year and now
Gingerbread men have become our treasured tradition.
Today if you are following along on ::The Holiday Challenge:: we begin baking prep.  To avoid being overwhelmed, I prepare all the dough today, divide it into manageable packages, and freeze it. Then a couple of days before Christmas my children and I begin baking. And for a couple of days our home smells like gingerbread which is so much fun! And this year we are adding some mints and easy fudge to the mix.

This is the weekend to look at your recipes, make sure to have all of the ingredients.  Decide what preparation you will be doing ahead of time. Most any dough with butter will freeze well. Cakes that are completely frosted will keep for a couple of days. And cakes, frosted or not, will freeze OK, but they take a little time to thaw. Breads, cookies, brownies, and fudge should be wrapped completely and can be kept in the freezer, fridge or counter.  Happy Baking!

I've never actually made a gingerbread recipe My mom used to make the best spice cookies every -- big and round and yummy! I think handmade homemade are always the best gifts -- better than anything you can buy in the store. Happy holidays! :) Tammy
