Chocolate Covered Cherries {Recipe}

A fun and easy recipe 
for the coming holiday!

Chocolate Covered Cherries
1 bag (or about 2 cups) of chocolate chips melted in a sauce pan over the lowest possible heat. For a long time I would not use chocolate chips because when heated and cooled again the chocolate would turn grainy and sometimes white-ish. But I learned a little secret, if you add a tablespoon or two of vegetable oil per cup of chocolate chips your chocolate turns out wonderfully. And now I can't stop covering things with chocolate. It is so easy!




Maraschino cherries, dipped in melted chocolate w/a little oil mixed in,



and set on almond slices to cool.

Some I covered fully and some I only dipped in, both were wonderful!

Chocolate covered cherries are my most favorite sweet treat in all the world. The addition of the almonds makes them extra special looking.

Okay, now see, this isn't really helping me on my brand new "diet". I look at this and reason with myself,"Cherries are a fruit. Fruit is good for you. And (dark) chocolate has all of those wonderful anti-oxidants. Surely this is the perfect for a diet and should maybe even be made a main dish." Thank goodness I don't have any cherries or chocolate in the house right now.

This reminds me of the little chocolate mice that my daughter and her children made at Christmas. The base is an Oreo divided. The cherry is dipped in chocolate and stuck halfway back (the stem makes the tail) and a hershey kiss is stuck on the front. Two almond halves make the mouse ears and dots of red frosting make the eyes. Funny thing -- they had made about three dozen for Christmas and had set them on cookie sheets on the top of my fridge to set. Just last week, I was cleaning the top of the fridge and guess what I found -- a mouse! (A cute little chocolate mouse, that is!) Sorry this departs from your post -- and thanks for the reminder that chocolate covered cherries go for Valentine's Day, too.
